Etēsia is a small kitchen-counter wine bistro in the Old Quarter from the team behind Hanoi cocktail bar Polite & Co. Most seats face a narrow bar and open kitchen, with a few tables in quieter corners, so reservations are recommended.
The list runs to about 350 labels with real depth in Burgundy, plus Rhône and grower Champagne, and many bottles are exclusive to Hanoi. A Coravin system makes it possible to pour rare wines by the glass or as 50ml tasters, and Flavors of Hanoi counts up to 40 wines by the glass.
The food is coastal European and Mediterranean with Asian touches: wagyu carpaccio, flambéed prawns, house-made pasta and pigeon. It is one of the city's most serious wine lists.
Small bars fill up fast on Friday and Saturday nights. Book ahead where you can.
