Saam is the third venue from chef Sareen Rotjanametin, a mini wine bar and restaurant on Sukhumvit 31. The wine list concentrates on natural and low-intervention bottles.
The food is Thai with modern technique: puffed sticky-rice 'sourdough' with dry-aged beef tartare, tom yum-spiced corn ribs, son-in-law chicken wings, a 'Thai bolognese' with hand-cut noodles, and a tom yum sundae.
It suits a dinner where the wine and the cooking get equal attention.
Small bars fill up fast on Friday and Saturday nights. Book ahead where you can.
