temper. is a wine room, restaurant and cocktail lounge from Ebb & Flow Group, spread over about 4,000 sq ft on two levels at Mondrian Singapore Duxton. A custom-built cellar greets you at the entrance, the upstairs wine room is for quieter conversation and the lounge below has vinyl sets and live music.

The wine programme, led by Master Sommelier Roberto Durán, runs to more than 2,100 bottles and 1,200 labels from over 30 countries, with more than 250 labels poured by the glass. It won Best Long List and Best Newcomer List at Star Wine List of the Year Southeast Asia 2026.

The seafood-forward kitchen, with input from Willow chef Nicolas Tam, serves red shrimp carpaccio, crab rolls, seafood towers and uni linguine. It suits wine explorers who want huge choice by the glass and a buzzy night out.
